One of the best things about me attempting to live a healthier lifestyle is that fact that the kids want to join in. I'm not alone in this and that makes me happy. We eat healthy together and exercise together. Even the three-year-old gets into it. We congratulate each other and high five when we hit our workout goals. It's a lot of fun. (I have to tell you that I never persuaded my kids to get involved, they just wanted to.)

Here is what our Ab Monthly Challenge looks like:
Last night we had a very yummy broccoli and beef stir fry, here is the recipe (modified to what I had on hand):
1 1/2 lbs of sirloin steak sliced thin
2 cloves of garlic (minced)
chicken or veggie broth
carrots (sliced thin)
Put the steak, 1 tbsp of coconut aminos, and 1 tbsp of dry sherry in a bowl.
Let marinate for a couple of hours or over night.
In a large skillet or wok heat up 2 tbsps of coconut oil.
Once oil is completely melted, add in steak.
Place steak evenly in skillet, let brown on one side then put into a clean bowl.
Next, add in your veggies and 2 tbsps of water.
Cover with a lid or foil for a couple of minutes.
While your veggies are steaming,
put garlic, 1 tbsp of ginger, 3 tbsps dry sherry, 3 tbsp chicken/veggie broth,
3 tbsps coconut aminos, 1/2 teaspoon of sesame oil, and 1 tbsp of honey
into a bowl and wisk together.
Remove foil or lid from skillet, make a ring in the middle of your skillet
with your veggies and add in your garlic mixture.
Then add your steak back in.
Cook until meat is your desired doneness.
Spoon onto plates and sprinkle on sesame seeds.
You can add arrowroot flour to add thickness to your sauce, but we didn't have any.
I just spooned the liquid over the stir fry on our plates.
The only bad part of this recipe was that I didn't make enough, so next time I will make triple the amount! We have loved every single healthy recipe that I've made, with exception to the fajitas I tried cooking in our dutch oven. DO NOT TRY AT HOME! Fajita meat and peppers should be fried not cooked in the oven...EVER. Live and learn.

PS. In my defense the fajitas were a frozen crockpot recipe that was still frozen when I got home from work (because someone forgot to defrost it). So, in an attempt to hurry and get dinner done, I threw it in the dutch oven and let it cook for an hour. Never again.
